There are several ways you can prepare the sweet potatoes -
1- If I am already baking something - ill wrap them in foil and put them in the oven to bake
2 - Steam over boiling water for 10 - 15 mins to soften then wrap in foil and bake for 30 mins in hot oven
3 - Use the potato function on your microwave ( If it has one ) - this is what I do and its so easy only takes 7 mins and they were both done perfectly!!
Combine all other ingredients except avocado and sour cream in a bowl and toss to combine
Once potato is cooked - split open and spread on avocado and top with salsa and sour cream.
Eat as is or place back into a hot oven for 10mins to allow the cheese to melt through ( if melting cheese - add the sour cream once the potato comes out of the oven )
